Spruce, cloudberry, lingonberry, birch
Spruce tips for a citrusy flavor and vitamin C, harvested in the early summer. Garnish a salad. Spruce tip ice cream! Spruce was used in alcoholic beverages by the ol'timers to cure/prevent scurvy.
Cloudberry, I have never harvested but would like to.
Lingonberry is a great alternative to cranberries, super plentiful in much of Kenai Peninsula Alaska. Harvest after first frost.
Birch can be tapped for sap similar to a maple. Drink the birch water straight, or boil down into syrup. The syrup has a smoky flavor. Great for glazing meats or donuts. Young birch leaves can be brewed in tea, but I haven't tried it yet.
